A lovely kale salad and I’m back!

So I just looked and realized I haven’t posted anything for a month! I knew it had been a little while, but not that long! Bad Sierra!!!

Anyway I’m back to posting regularly again. Long story real short, I started working again! I took a break from working for about 2 years (for an array of reasons). I’m working part time now, and it has taken up alot of my spare time haha!

I’ve made lots of things in the past month! Too many to even post! I will however post the salad I made today for lunch… It was beyond good and so good for you!! Here’s what I did:

Salad:
-1-2 cups of raw kale – chopped (ribs removed)
-1 cup raw shredded brussel sprouts (I used the already shredded ones from Trader Joes)
-1/8 cup sliced almonds
-1 tbsp. shaved Parmesan
-2 oz. shredded cooked chicken breast

Dressing:
-Juice from 1/2 lemon
-1 tbsp olive oil
1 tsp Dijon mustard
-sea salt & pepper to taste

Put all of the salad ingredients in bowl. Put all dressing ingredients in separate bowl, whisk together and pour on top of salad. I find that with raw kale, the longer the dressing is on it the better it tastes!

If you think raw kale and raw brussel sprouts don’t sound appealing … This salad will make you change your mind!

Onto other happenings … We celebrated my mom’s birthday this past weekend! We go to her favorite restaurant every year to celebrate! Luna Park is such a great place for birthday’s! The food is fantastic, service is good and atmosphere is the best! If you’re in LA and haven’t been, you must check it out!!

Kale Chili

I came up with this chili last year in an effort to add a leafy green veggie to a chili. I didn’t want the veggie to take away from a classic “chili” flavor and didn’t want the veggie to fall apart in the cooking process and wanted it to be tasty… My solution was the lovely vegetable kale! This is a favorite in our household! Plus it’s a great make ahead meal for lunch’s, etc!

Here’s the recipe:

Ingredients:
-1 lb. extra lean ground beef
-15 oz. can organic black beans
-15 oz. can organic pinto beans
-15 oz. can organic diced tomatoes
-6 oz. can tomato paste
-2 cups chopped kale w/ ribs removed
-2 cups water
-2 tbsp. chili powder
-1/2 tbsp. ground cumin
-pinch of crushed red pepper
-4 dashes of Worcestershire sauce
-salt & pepper to taste

Directions:
Brown ground beef in large Dutch oven, once meat is browned add beans, diced tomatoes, tomato paste, water, kale, all spices & Worcestershire sauce. Stir well and bring to a boil then simmer for 45 min. Stir occasionally and add water if it thickens up too much.

Optional: Add a dollop of non fat Greek yogurt on top!

Serves 5-6
Aporox. 250-300 calories per serving
